Product Description

This Swiss cheese is crafted in the canton of Appenzell, near the Austrian border. The art of cheese making is one of the carefully guarded traditions in the Appenzell region, the source of one of the country's great specialty cheeses. Tangy, mature-flavored Appenzeller dates back some 700 years. Weighing from 15 to 20 pounds, the wheels are taken to storage cellars soon after being made, where they are rubbed regularly with a mixture of water, white wine, salt and herbs. After it ages for approximately three months, Appenzeller achieves its ideal form: pressed, cooked-curd, brushed-rind cheese with occasional pea-sized holes. It has a pleasantly smooth texture, but this cheese's true allure is its fruity tang. This recipe gives the cheese its special taste, making it pair extremely well with fresh fruit but it also melts nicely. Great for snacks, appetizers and hot dishes.

A mildly spicy, mature-flavored semi soft cheese with a smooth texture.

    Finally, the search is over! This is truly the most authentic Appenzeller cheese we've had in the States. Creamy, complex flavors, unlike cheeses you find in your local grocery. We ordered a small portion and everyone at our Oktoberfest party said it was their favorite of all the cheeses we served. So happy to have found your store!

    Well, maybe our favorite cheese is the one we are eating at the time, but this one is very high on the list. Soft and creamy with a bit of a bite to it. Hard to describe, but I recommend it.

    Also, I have to say that the customer service just couldn't be better. I ordered three days before a holiday weekend, UPS delivery. Theresa called me to ask if USPS would work because she feared the cheese would possibly sit in the UPS warehouse over the long weekend. Of course that was OK. Then, three days later she called again to make sure the delivery had arrived safely, which it had. Thank you Theresa for your concern and for providing great Swiss products.

    Being from the region of Appenzell, this cheese was our daily "bread", growing up. Compared to so many cheeses out there that have hardly any flavor or are just salty, this one is strong but mild at the same time. The soft texture lets you eat it as a dessert or melt it in a cheese fondue, don't do too many of those here in sunny Miami.
    By the way this is so funny, Eric Messmer who posted his opinion just a few lines below these, was one of my best friends growing up, we lived like half a block apart and haven't heard of him in years, until today, reading his review!!!!

    Truly a universal cheese. I first bought this cheese in Lucern, when I was living in that beautiful city. I have used it in fondue, in Chicken Cordon Blue and of course, just crackers and cheese.
