Niidelchäs from Alp Jänzimatt simply is a cream enriched Alp Cheese. "Niidel" in the Obwalden dialect where Alp Jänzimatt is located, means "cream". Maker Adrian Riebli substitutes between 15 and 20% of the milk with cream in order to craft a cheese of great richness and smoothness.


Alp Jänzimatt belongs to the community of Giswil, Oberwalden in the central Swiss Alps, and can be reached by Sörenberg.  Located at 5.300ft. with grazing pastures around 6.000ft, this one-family operation belongs to the Riebli Family.  Niidelchäs is a classic Alpine-style cheese made from raw Alpine milk, aged at least three months to semi-firm, and has a truly beautiful flavor: deeply savory with beautiful Alpine grass brimming over hints of cave and grass.  A one-of-a-kind cheese among the many offerings that we carry.  It is great to be used for cooking, as well, as it has a wonderful meltability.  We hear Alpenmac made with this cheese is out of this world.
