Vacherin Fribourgeois is a hearty and potent Swiss cow's milk cheese with a semi-soft to firm texture, depending on age. Vacherin Fribourgeois is an "old fashioned" Vacherin with an uneven, craggly rind and harsh edges. Its taste is nutty with the perfume of fresh-cut hay. The flavors increase when melted.

    Somebody who doesn't know that freezing is bad for this cheese, did so, either by mistake or not knowing how this cheese has to be handled.

    There is little I can add here about the wonderful Vacherin Fribourgeois cheese that has not already been said, other than how I discovered it: I was chatting with a friend who had lived in Fribourg during his youth, and we somehow got onto the subject of fondue, and though how much I enjoyed it, I hadn’t made it in years. He immediately told me that there was only one authentic fondue, and that it required a difficult-to-find cheese. He doubted it was even available here in the states. So I began a difficult search indeed. Local cheese stores around here had heard of it but had never stocked it. Six other on-line vendors listed it but we’re all “out of stock”. About to give up and use something else, I finally found Swiss Favorites, and of course you offered it. I ordered it and Gouda, and both arrived quickly, perfectly packaged with ice. Needless to say (because others already have) the fondue was beyond any I have ever tasted, and a guest at dinner enthusiastically agreed. An extra plus was the luscious lingering smoky, earthy, warm aroma around the house later that evening. Thanks so much for stocking this winner. I’ll be back.

    This cheese is an essential ingredient of motie-motie fondue. We love buying it from the Swissfavorites store because we know it is authentic and priced right.

    Having over the years only made fondue with Emmentaler and gruyere, the family almost laughed me out of the apartment when I started shredding the Vacherin, as its pungency was very obvious, but when they sat down for fondue everyone agreed it was the best one yet! Absolutely delicious! The service provided by Theresa and Walter was outstanding! They went though the extra effort to make sure that the cheese arrived in time to celebrate New Year despite the difficulties they encountered. Beautifully packed and much appreciated. Thanks again!

    great for traditional swiss fondue!

    Great product and excellent shipping and customer service! as far as the cheese goes, when it comes to making a traditional motie-motie swiss fondue (yes the original from fribourg), this is recommended and my personal favorite!! it always tastes just like when my husband and I had it in Switzerland!!

    Vacherin comes in two styles both having at one time been contaminated with an organism called Listeria. after years of non-production ,the damage was eliminated and production resumed of this very fine cheese. The other Vacherin is sold under the name of Mont D'Or and is a more pungent and semi-liquid cheese that I find irresistible, well, both in fact. This shipment came sealed in plastic and was fresh to cut and eat. It is not cheap, but worth every penny. I recommend it highly-make sure you do not eat it at refrigerated temperature. BTW,the classic Swiss fondue does not contain either Vacherin or Appenzeller, but there's no law against doing so, if you like it. Don't forget the Kirsch !

    Makes for a Delicious Fondue

    A friend just got back from Switzerland and said that she wanted to make a fondue like she just had there, only problem was that it used a different swiss cheese called Vacherin. We found it at Swiss Favorites and ordered. The 'jury was out' when i took a sample bite, but when melted in the fondue, it was spectacular! I was so happy to have a small piece left over that i could use in a mac & cheese as it added a ton of great flavor and bonded with the mac just fine.
