There is little I can add here about the wonderful Vacherin Fribourgeois cheese that has not already been said, other than how I discovered it:
I was chatting with a friend who had lived in Fribourg during his youth, and we somehow got onto the subject of fondue, and though how much I enjoyed it, I hadn’t made it in years.
He immediately told me that there was only one authentic fondue, and that it required a difficult-to-find cheese. He doubted it was even available here in the states.
So I began a difficult search indeed. Local cheese stores around here had heard of it but had never stocked it. Six other on-line vendors listed it but we’re all “out of stock”. About to give up and use something else, I finally found Swiss Favorites, and of course you offered it.
I ordered it and Gouda, and both arrived quickly, perfectly packaged with ice.
Needless to say (because others already have) the fondue was beyond any I have ever tasted, and a guest at dinner enthusiastically agreed.
An extra plus was the luscious lingering smoky, earthy, warm aroma around the house later that evening.
