Colomba di Pasqua [~1lb]

"Colomba di Pasqua", literally meaning, "Dove of Easter", is one of Italy's most unique seasonal breads. All around the world, Colomba means glad tidings and provides a joyful ending to the Easter meal. It is a rich, sweet bread made with eggs, butter, candied citrus peel, and chopped almonds. It is topped with a sweet and crunchy hazelnutmixture. There are seven whole almonds in the bread representing perfection and divine approval. The dough is baked into the shape of a dove with outstretched wings, symbolizing the coming of spring. It also is a sign for the Holy Spirit and a symbol of peace, purity, and divine inspiration.
