Swizzrocker is a raw milk classic amongst the semi-hard cheeses from Switzerland. It is produced with a great deal of love and expertise by small family businesses in the cantons of Thurgau and St. Gallen, as well as in the Zurich highlands. Each wheel is made by hand and carefully aged in the cheese
cellar. The dairy farmers and cheesemakers know each other personally. The milk is always fresh thanks to the short transport routes, while constant quality controls from the milk supply to the ready-to-eat
cheese guarantees that this Swizzrocker® can always be enjoyed to the fullest.

    Milder than Appenzeller, yet with a tiny 'bite'

    I hadn't heard nor tried this cheese before ordering it here. After trying a small bite before using it in cooking, I found that this cheese is quite mild compared to, let's say an Appenzeller, but has a tiny 'bite' to it and a very slight bitter aftertaste, which is unusual for Swiss Cheese. I used it grated on a pasta bake and it all came together beautifully. Melted great after grating it and had the perfect amount of salt for the dish. My family asked for seconds!
