Alpí is a cooked, pressed cow's milk cheese crafted in Switzerland using traditional Swiss cheesemaking expertise and milk from pasture-grazed cows. It is then brought to Catalonia, Spain, where it is washed with aromatic herbs and aged for 6-8 months, developing a distinctive character that blends the Swiss tradition with the flavors of the Moianès region.
